1- Combine all the ingredients for spice-mix in a small bowl and mix well. Keep aside.
2- Make horizontal slits into each paneer square to cut it into half leaving it joined from one end. Do not cut through till the edge of the paneer square.
3- Stuff green chutney into each paneer square and place it in a dish.Sprinkle the spice-mix on the paneer squares and mix well so that they get nicely coated with spices.
4- Mix all the ingredients for batter along with half cup of water or as required to make a thick batter.Heat the oil for deep frying. The oil should be medium hot to fry perfect pakoras.
5- To check, drop a bit of batter into the oil, the batter should come up, but not change color right away.
6- Dip each paneer square/piece in the besan batter and drop 5-6 pieces at a time into the hot oil.
7- Fry until golden brown from both sides. Place on a dish lined with kitchen towel/absorbent paper napkins.
7- Sprinkle some chaat masala and serve hot with tomato ketchup and tea.
