Soak the urad dal for 4 to 5 hours
When soaked grind into a fine paste. Add little water if required don't add much. At this stage the paste is little thicker and heavy.
Beat the batter using a hand whisker for 5 to 7 minutes. The batter will become lighter and fluppy. Air will be well incorporated into it. This will make your Vada soft. U can observe the difference in pictures.
Now chop curry leaves, coriander leaves, green chilies, ginger and onion.
Add all these to the batter. Add rice flour and 1 tbsp of oil and salt as per taste. Mix well.
Add the onions and mix. Heat oil in a oak for frying the vadas.
Now take a Katori and wrap a muslin cloth or a cotton cloth around it and tightly hold from the bottom. The cloth must be wet. Not watery but wet.
Now place some batter on the cloth. Dip your hand in water. Now pat your wet fingers on the batter and give it a flat shape or donout shape.
When the oil is medium hot slide the vadas into oil and fry until golden brown in medium heat. The oil should not be excess hot as the vadas will turn golden from outside but they will not be properly cooked from inside. So keep the heat medium. U can increase the heat later.
When cooked place them on kitchen towel to remove the extra oil.
Serve hot with your fovourite chutney.
Tip. Don't keep the batter for too long. As the batter will leave water with time and become watery.
U can give any shape to the vadas. Can fry like pakodas if u r unable to fry them like this.
