Ingredients

Serves : 6
  • 1 tsp Olive oil


  • 5-6 Cherry tomatoes, cut in quarters


  • 7-8 Mushrooms, washed and chopped


  • 1 diced Bell pepper


  • 1 garlic clove, minced


  • 2 shallots, chopped


  • 1/2 Tsp dry Italian seasoning


  • 1/2 cup grated Mozzarella cheese


  • 1/2 cup tomato sauce


  • 1 tsp red chilly sauce


  • 1 pinch of garlic powder and onion powder each


  • 1 tsp salt & pepper, or to taste


  • 6 LOW FAT Marie biscuits or Savory crackers

Directions

  • Make your no cook pizza sauce for the pizzinis first! In a bowl, mix the tomato sauce, chilly sauce, garlic powder, onion powder, 1/4 tsp of Italian seasoning and salt-pepper to taste. Mix and set aside!
  • Next, sauté your vegetables for the pizzini topping! In a sauce-pan, heat the olive oil.
  • Add the minced fresh garlic and fry for a few seconds
  • Add all the veggies and seasonings to the pan. Sauté on high heat for 3-4 minutes. Switch off the gas and cool the mixture completely.
  • To make the pizzinis, pre-heat the oven on grill mode at 180 degrees C.
  • Place your biscuits on a greased baking tray.
  • Top each of them with pizza sauce and veggie mixture.
  • Sprinkle grated cheese generously on all your biscuit pizzinis.Also sprinkle some salt and pepper on the top!
  • Grill for a couple of minutes till the cheese melts and sizzles.
  • Serve immediately and enjoy!!
