Beat eggs and sugar together in a large bowl.
Add melted butter and keep beating
Add pure vanilla extract and milk.
Stir thoroughly
Take the flour and add a pinch of salt
Add to the bowl with egg milk mixture and stir until smooth
Heat a non stick skillet, add olive oil and spread it using a paper towel
Pour the batter into the skillet and cook untik both sides become golden brown
Transfer the pancakes to a plate and repeat until no batter remains
Garnish with some butter and honey. The pancakes are ready to be served.
