Heat 3 teaspoon oil in a pan. Add whole spices and roast until aromatic
Add onions and saute for 3-4 minutes
Add ginger garlic paste and saute until raw aroma goes away
Add green chillies and cashews. Saute for a minute
Add tomatoes and saute until mushy
Add Dessicated coconut and lightly roast. Allow to cool completely. Add required water and grind to smooth puree
Grill or fry paneer with little oil until golden brown on edges and keep it aside
Heat 2 tbsp ghee/ oil. Add bay leaf and saute for few seconds
Add ground puree and saute for 5 minutes
Add red chilli powder sugar and salt. Mix well
Add thin coconut milk and paneer. Cover and simmer for 3 minutes
Add thick coconut milk, stir well and switch off
Cover and rest for 15-20 minutes. Garnish with coriander leaves and serve hot
