  • 2 cups All purpose flour

  • 1/4th cup Sugar

  • 2 tsp Baking Powder

  • 90 grams cold butter, cut in cubes

  • 1 cup fresh Blueberries, washed and dried

  • 1 egg+ 1 egg for egg wash

  • 1/2 cup Cream

  • 1 lemon’s zest

  • 2-3 drops of Vanilla essence

  • 2-3 drops of Lemon extract

  • 2 tsp Brown sugar

  • 1 small cup Jam or Clotted cream for serving

    Preheat your oven to 200 degrees C.

    In a large bowl, combine your flour, baking powder and sugar. Give a good whisk together.

    Add the chilled butter cubes and with your hands, mix them in the flour mixture until you get a bread crumb like texture. This step is very important for flaky scones!

    Throw in the fresh Blueberries and gently fold them into the mix. Set aside.

    In a separate bowl, break the egg and beat lightly.

    Add the cream, Vanilla essence, Lemon extract and the lemon zest. Mix well!

    Add this liquid to the dry mixture little by little and bring the dough together. Do not over knead!

    Transfer the dough to the flat surface and sprinkle some flour in it. With light hands, knead it 2-3 times till it forms a ball. Gently pat it in a thick circle after that.

    With a biscuit cutter, cut in small circles or triangles and place on greased baking tray.

    With a pastry brush, apply some beaten egg all over the the cut shapes. This will give your scones a lovely glaze.

    Lastly, sprinkle some brown sugar on top of them.

    Bake for around 20 minutes at 200 degree C, till they get golden brown in color!

    Cool completely before lathering them with clotted cream and your favourite Jam. Serve with Tea! Enjoy!
