Lemon-Blueberry Scones

  • 2 cups All purpose flour

  • 1/4th cup Sugar

  • 2 tsp Baking Powder

  • 90 grams cold butter, cut in cubes

  • 1 cup fresh Blueberries, washed and dried

  • 1 egg+ 1 egg for egg wash

  • 1/2 cup Cream

  • 1 lemon’s zest

  • 2-3 drops of Vanilla essence

  • 2-3 drops of Lemon extract

  • 2 tsp Brown sugar

  • 1 small cup Jam or Clotted cream for serving


  • Preheat your oven to 200 degrees C.
  • In a large bowl, combine your flour, baking powder and sugar. Give a good whisk together.
  • Add the chilled butter cubes and with your hands, mix them in the flour mixture until you get a bread crumb like texture. This step is very important for flaky scones!
  • Throw in the fresh Blueberries and gently fold them into the mix. Set aside.
  • In a separate bowl, break the egg and beat lightly.
  • Add the cream, Vanilla essence, Lemon extract and the lemon zest. Mix well!
  • Add this liquid to the dry mixture little by little and bring the dough together. Do not over knead!
  • Transfer the dough to the flat surface and sprinkle some flour in it. With light hands, knead it 2-3 times till it forms a ball. Gently pat it in a thick circle after that.
  • With a biscuit cutter, cut in small circles or triangles and place on greased baking tray.
  • With a pastry brush, apply some beaten egg all over the the cut shapes. This will give your scones a lovely glaze.
  • Lastly, sprinkle some brown sugar on top of them.
  • Bake for around 20 minutes at 200 degree C, till they get golden brown in color!
  • Cool completely before lathering them with clotted cream and your favourite Jam. Serve with Tea! Enjoy!
