for gravy:
soak cashew nuts in warm water for 10 minutes
blend the fried onion, yogurt and soaked cashew nuts into a paste, keep aside
chop and blend tomatoes, keep aside
heat oil in a pan
add the prepared fried onion paste and cook for 2-3 minutes
add garam masala, red chili powder, coriander powder and turmeric powder
mix and cook for 1 minute
pour in the tomato paste
add salt and sugar
mix well and cook for 4-5 minutes
add water as required
cover and cook for 2-3 minutes
add cream, mix well and turn off the flame
gravy is ready
for stuffing:
heat oil in a pan
add green chili, ginger, cashews and raisins
cook for few seconds
add carrot, green peas and capsicum, mix well
cover and cook for 4-5 minutes
add grated paneer, salt, red chili powder, garam masala, coriander powder, turmeric powder and mix well
using a masher, mash these veggies well
turn off the flame
stuffing is ready
for making parcha:
cut the paneer slab in two slices
spread the prepared stuffing over one slice and cover it with another slice
in a grill pan add butter, kasuri methi and chili flakes
place the paneer parcha and grill this
flip over and grill for one more minute
now place this paneer parcha on a serving plate
pour the gravy on the sides and serve hot
