Ingredients

Serves 4

  • 1 cup all purpose flour

  • 1.5 tbsp oil

  • 1/2 tsp salt or as per taste

  • 1/4 tsp carom seeds

  • 1/3 cup spinach puree or as required

  • 4 cups oil for deep frying

Directions

    mix flour, salt, carom seeds and oil in a bowl

  • 02

    add spinach puree little by little and prepare a stiff dough

  • 03

    cover the dough and keep aside for 15 minutes

  • 04

    knead the dough again after 15 minutes and pinch lemon sized balls from it

  • 05

    take a ball and roll into a thin round chapati using rolling pin

  • 06

    cut thin chapati into a rectangular sheet

  • 07

    make slits on the sheet leaving some space on the edges

    now fold the sheet in half, you can put liitle water at the edges

  • 09

    fold once again in half

  • 10

    then take one of the sides and fold in reverse through the middle of layers

  • 11

    prepare all the mathris in same way

  • 12

    heat oil in a kadai

  • 13

    when oil becomes hot, reduce the flame to low

  • 14

    now add the mathris and fry until crispy

  • 15

    remove the mathris from oil and drain on the absorbent paper

  • 16

    serve or store in an air tight container after it becomes cool
