Ingredients
Serves 4
200 grams paneer
3 tomatoes
1 green chili
1 inch ginger
8-10 cashews
2-3 tbsp oil
1 tsp cumin seeds
2 dry red chilies
1 pinch asafoetida
1/2 tsp salt or as per taste
1/2 tsp red chili powder
1/4 tsp turmeric powder
1 tsp coriander powder
2 tbsp kolhapuri masala
1 tbsp coriander leaves chopped
to make kolhapuri masala: 1 inch cinamon stick
7-8 cloves
4 green cardamoms
1 black cardamom
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp fennel seeds
8-10 black pepper corns
1 tsp white sesame seeds
1/3 cup dried coconut
8-10 dry red chilies
Directions
to make kolhapuri masala:
in a heavy bottomed pan, roast all the listed ingrediants for kolhapuri masala on low flame until you can get aromatic smell coming from the spices
once roasted, transfer to a bowl and allow it to cool slightly
once the roasted spices cools down blend this to a fine powder
kolhapuri masala is ready, keep aside
to make paneer kolhapuri:
grind the tomatoes, green chilies, ginger and cashews in a mixer jar to make a fine paste
cut paneer into squares
heat oil in a pan and add cumin seeds
when it starts crackling add asafoetida and red chillies
next add tomato-cashew paste and saute until raw smell goes
add salt, red chili powder, turmeric powder, coriander powder and kolhapuri masala
add 2 tbsp water and cook until oil separates from the gravy
now add 1/2 cup water and let it simmer for few more minutes
add chopped coriander and paneer chunks
give a nice stir and then cook for 2-3 minutes
transfer paneer kolhapuri in a serving bowl
serve this super yummy paneer kolhapuri with rice, chapati, naan or paranthas
