Ingredients

Serves : 4
  • 200 grams paneer


  • 3 tomatoes


  • 1 green chili


  • 1 inch ginger


  • 8-10 cashews


  • 2-3 tbsp oil


  • 1 tsp cumin seeds


  • 2 dry red chilies


  • 1 pinch asafoetida


  • 1/2 tsp salt or as per taste


  • 1/2 tsp red chili powder


  • 1/4 tsp turmeric powder


  • 1 tsp coriander powder


  • 2 tbsp kolhapuri masala


  • 1 tbsp coriander leaves chopped


  • to make kolhapuri masala: 1 inch cinamon stick


  • 7-8 cloves


  • 4 green cardamoms


  • 1 black cardamom


  • 2 tbsp coriander seeds


  • 1 tbsp cumin seeds


  • 1 tsp fennel seeds


  • 8-10 black pepper corns


  • 1 tsp white sesame seeds


  • 1/3 cup dried coconut


  • 8-10 dry red chilies

Directions

  • to make kolhapuri masala:
  • in a heavy bottomed pan, roast all the listed ingrediants for kolhapuri masala on low flame until you can get aromatic smell coming from the spices
  • once roasted, transfer to a bowl and allow it to cool slightly
  • once the roasted spices cools down blend this to a fine powder
  • kolhapuri masala is ready, keep aside
  • to make paneer kolhapuri:
  • grind the tomatoes, green chilies, ginger and cashews in a mixer jar to make a fine paste
  • cut paneer into squares
  • heat oil in a pan and add cumin seeds
  • when it starts crackling add asafoetida and red chillies
  • next add tomato-cashew paste and saute until raw smell goes
  • add salt, red chili powder, turmeric powder, coriander powder and kolhapuri masala
  • add 2 tbsp water and cook until oil separates from the gravy
  • now add 1/2 cup water and let it simmer for few more minutes
  • add chopped coriander and paneer chunks
  • give a nice stir and then cook for 2-3 minutes
  • transfer paneer kolhapuri in a serving bowl
  • serve this super yummy paneer kolhapuri with rice, chapati, naan or paranthas
