Black Rice Risotto

Ingredients

Serves 3

  • 1 cup black rice

  • 2 cup vegetable stock

  • 1 onion finely chopped

  • 1/2 cup mushroom finely chopped

  • 1-2 garlic cloves finely chopped

  • 1 tbsp olive oil

  • 2-3 tbsp grated parmesan cheese

  • 1/2 tsp black pepper powder

  • 1/4 tsp salt

  • 3-4 basil leaves

Directions

    1.Heat olive oil in a pan, add finely chopped garlic and saute for few seconds.

    Next add finely chopped onions and cook for 1-2 mins on low heat.

  • 03

    Add sliced mushrooms, half of vegetable stock, black rice and let it cook for 6-8 mins until the stock is absorbed.

    Again add rest of the vegetable stock, salt, black pepper powder mix well. Cover and cook till the stock is absorbed.

  • 05

    Switch off the flame serve with some roasted cherry tomatoes and herb sauce.
