Ingredients

Serves : 4
  • 250 gms boiled long grain rice


  • 4 eggs


  • 2 Onions chopped finely


  • 2 Capsicum chopped finely


  • 2 carrots chopped finely


  • 100 gms green peas boiled


  • 2 tsp Soy sauce


  • 2 tsp Red chilli sauce


  • 1 tsp tomato sauce


  • 2 tsp Schezwan chutney


  • 1 tsp chilli powder

Directions

  • Soak rice for ten minutes
  • Boil water and add rice with little lemon juice
  • When rice is cooked, drain excess water
  • Beat eggs with salt and scramble it
  • Saute onions and vegetables nicely for 5 to 6 minutes
  • Add egg scramble and saute for a minute
  • Add boiled rice, salt and sauces one by one, starting with Soy, Red chilli, Ketchup and add Schezwan chutney.
  • Mix lightly
  • Add Red chilli powder and mix
  • Cook for 5 to 8 min,,
  • Stir occasionally to avoid burning
  • Serve with Schezwan chutney and sauces of your choice.
