Ingredients

Serves 4

  • 250 gms boiled long grain rice

  • 4 eggs

  • 2 Onions chopped finely

  • 2 Capsicum chopped finely

  • 2 carrots chopped finely

  • 100 gms green peas boiled

  • 2 tsp Soy sauce

  • 2 tsp Red chilli sauce

  • 1 tsp tomato sauce

  • 2 tsp Schezwan chutney

  • 1 tsp chilli powder

Directions

    Soak rice for ten minutes

  • 02

    Boil water and add rice with little lemon juice

  • 03

    When rice is cooked, drain excess water

  • 04

    Beat eggs with salt and scramble it

  • 05

    Saute onions and vegetables nicely for 5 to 6 minutes

    Add egg scramble and saute for a minute

  • 07

    Add boiled rice, salt and sauces one by one, starting with Soy, Red chilli, Ketchup and add Schezwan chutney.

    Mix lightly

    Add Red chilli powder and mix

    Cook for 5 to 8 min,,

    Stir occasionally to avoid burning

  • 12

    Serve with Schezwan chutney and sauces of your choice.
