Ingredients
Serves 4
Prawns - 300 gms
Basmati rice - 1 1/2 cup
Oil 2 tbsp
Ghee 1 tbsp
Cinnamon - 2 inches stick
Cardamon - 4
Cloves - 4
Star anise - 1 large
Bay leaf - 2
Ginger garlic paste - 2 tsp
Onion - 2 large thinly sliced
Green Chilly - 3 whole
Tomato - 2 sliced
Coriander and mint leaves chopped - 1 cup
Curd - 1/4 cup
Salt 2 tbsp or as per taste
Water - 2 cups and little more
For Marination: Turmeric - 1 tsp
Garam Masala Powder - 1 tsp
Chilly powder - 1 tsp
Salt 1 tsp
Directions
Marinate the prawns with the ingredients mentioned in the marination list and keep aside while you make ready for the other ingredients. Wash and soak the basmati rice for about 15 mins.
Heat oil and ghee in a pressure cooker. Add the marinated prawns and fry on medium heat for around 10 mins.
Add cinnamon, cardamon, cloves, bay leaves and saute for 2 mins.
Add the ginger garlic paste and saute for a min. Add thinly sliced onion and green chillies and saute till onion turns soft.
Add sliced tomotoes and fry for a min. Add Salt, curd and chopped coriander leaves and mint leaves.
Add the soaked basmati rice. Add water and adjust the salt at this point.
Close the cooker and pressure cook for 3 whistles and switch off the flame. Let the pressure release by itself and prawn pulao is ready to be served.
