Cook rice al dente with the whole spices except bay leaves. Drain and keep aside.
Pressure cook rajma with little salt or just boil it taking care not to over do that.
In a non stick pot, heat oil or ghee, add the cumin seeds and bay leaves. Next add the onions and saute them nicely. Next add the masalas and the boiled rajma.
Add the cooked rice and give it all a thorough mix. Garnish with coriander and mint leaves. Sprinkle garam masala on top. Dish it out pretty much hot with tawa chicken as i did. Any gravy or curry can be used instead as per your family's preference and choice.
Healthy and nutritious option for the kids and the adults alike. Try this beauty for lunch or dinner. It tastes just yum with any simple chicken dish. I always make tawa chicken with this. An interesting pulao that is loaded with protiens and is a lovely alternative to the boring rice dishes. Flavourful and aromatic plus colourful appearance of this rice preparation makes it stand out in the crowd.
