Ingredients

Serves : 4
  • Cooked rice or leftovers 3 cups


  • Fresh fruits cubed 2 cups


  • Cinnamon sticks 2 to 3


  • Cardamom pods 3 to 4


  • Bay leaves 3


  • Cloves 4 to 5


  • Butter or ghee 3 tbsp


  • Saffron strands 3-4 soaked in 1 tbsp milk


  • Caraway seeds 1 tsp


  • Almonds, pistachios and raisins 1/2 cup


  • Onions fried 2. (Optional)


  • Fresh cream 3 tbsp

Directions

  • Cook rice al dente and keep aside. However leftovers can also be used here and put to some constructive use therefore.
  • Heat butter or ghee in a pan and add all the whole masalas and the nuts. I have used ghee. Saute them for 2 mins.
  • Add the fruits and fry them for 2-3 minutes before adding the cream. Mix them well. Add the saffron soaked milk and let it simmer for 2 more minutes.
  • Transfer this to the pot of rice and give all a good mix. Garnish with fried onions and serve. It tastes delicious even without the fried onions.
