Ingredients

Serves 4

  • 2Cup soaked Basmati rice

  • 1yellow, red n green bell pepper

  • 1cup blanched corn

  • 1cup boiled rajma

  • 3tomatoes

  • 1onion

  • 3-4 tbs canola oil

  • 2tbs red chillipd or paste

  • 1tbs cummin pd

  • 8-10 gatlic cloves

  • 1/2tsp black pepper crushed

  • 1tsp salt

  • 1/2 Lemon juice

Directions

    In a pan add oil then crushed garlic and onion slices

  • 02

    Cook for 1-2. Minutes

  • 03

    Add tomatoes n cook fir seconds

  • 04

    Add corn and rajma, then all three coloured peppers

  • 05

    Add all the dry masala, lemon juice

  • 06

    Cook well add salt and vegetable stock or water

  • 07

    Let it boil

  • 08

    Once boil comes add rice

  • 09

    Cook on high flame till water get dry

  • 10

    Sim the gas and cook further for 4-5 mins

  • 11

    Setve with salsa

  • 12

    Your colourful mexican rice is ready
