Ingredients

Serves : 4
  • Cooked Rice: 2 cups


  • Onion: 1 large finely chopped


  • Tomatoes: 1 finely chopped


  • Green capsicum: 1/2 cup finely chopped


  • Carrots: 1/2 cup blanched


  • Cauliflower: 1 cup blanched


  • Ginger garlic paste: 1 tsp


  • Cumin seeds: 1 tsp


  • Turmeric powder: 1/2 tsp


  • Chilli powder: 2 tsp


  • Pav bhaji masala: 2 tbsp


  • Salt: 1 tsp


  • Paneer cubes: 1 cup


  • Coriander leaves: 1 tbsp chopped


  • Vegetable oil: 3 tbsp

Directions

  • Heat oil in a wok.
  • Add cumin seeds, let it crackle.
  • Add onions and saute.
  • Add ginger garlic paste and saute till the raw smell goes off.
  • Saute till onions turn light brown.
  • Add tomatoes and cook till it turns mushy.
  • Add all the dry spice powders and mix well. Sprinkle little water and mix again.
  • Add carrots and cauliflower and toss
  • Add paneer cubes and mix well.
  • Finally add the cooked rice and toss well.
  • Add salt as required and mix.
  • Switch off the flame and garnish with chopped coriander leaves.
