Heat butter or ghee in a non stick deep fry pan. Add garlic mince at first followed by all the spices except garam masala powder.
Saute chopped spring onions for a minute before adding the veggies. Saute all on a medium high heat. The veggies should not be over done.
After about 10 mins of stir frying, add khichdi and cook over low flame for 5 to 10 minutes. Sprinkle garam masala and garnish with chopped coriander generously.
Serve this yummy variation with curd chillies as i did with any gravy or curry of your choice. Curd chillies go very well with this flavourful rice preparation.
A flavourful innovative take on the ever famous rice dish by me. It can be made with leftover khichdi or you may also prepare khichdi especially for this recipe. It is a one pot meal for the kids and the adults alike and makes an ideal one for tiffin box or snack box. A lovely brunch idea too for the busy office going moms.
