You can very well use leftover rice for this. I used freshly prepared one today. Heat ghee and add the onions, green chillies and the garlic mince. Saute them for about 2 minutes.
Add the tomatoes now and the chilli flakes along with the pav bhaji masala. Mix well and leave it on covered for about 5 mins.
After the tomatoes get cooked, add the peas and the cabbage.
Cover and cook for further 3 to 4 minutes on medium flame so that the water if any will get absorbed. Keep stirring in between. After 4 minutes, add rice to it. Give all a good mix and garnish with coriander before you serve and a dash of lemon juice if desired.
Makes for an excellent tiffin box idea too. If you are using leftover rice, then cover with a lid and allow to get heated for further 5 to 7 mins before you serve.
