Ingredients

Serves : 4
  • For marinating- 500 grams boneless mutton


  • 2 tbsp white vinegar


  • 1 onion


  • 4 whole kashmiri chillies


  • 1 tsp salt or to taste


  • 1 tbsp mustard oil


  • For masala- 2 onion


  • 2 tbsp ginger garlic paste


  • 1 tbsp crushed whole coriander


  • 2 tbsp oil for frying


  • 2 bay leafs


  • 1 tsp powder of cinnamon and black cardamom


  • 1 potato


  • 4 wholemeal buns

Directions

  • To prepare marination soak chillies in vinegar and very little water for half an hour
  • Make thin slice of onion, deep fry until crisp, make paste.
  • Grind soaked chillies with its liquid to a fine paste
  • Marinate mutton with onion paste, chilly paste, mustard oil and salt, keep it refrigerated overnight or atleast 4 hours
  • Heat up 2 tbsp oil, add bay leafs then add onion, fry till golden brown
  • Add ginger garlic paste
  • When masala starts leaving oil add marinated mutton
  • Fry on high heat for 5 minutes then close the lid and simmer for 15-20 minutes, open the lid add boiling water in between to get the desired gravy. Add cinnamon- cardamom powder.
  • Cook on slow flame with lid on until done.
  • Make cubes of peeled potato and deep fry, add these cubes to mutton
  • Simner another few minutes, mutton should have thick gravy
  • Take whole grain buns, slice top 1/4th part and keep aside
  • Take other part, use a knife or spoon and scoop out from center to create a bowl shaped bun
  • Brush it with little oil and put it in the oven at 180 degrees for 5-7 minutes
  • Fill the prepared mutton in bun bowl, use other part as its lid
  • Kids will love it, you can reduce the spices as per your choice.
