Ingredients

Serves : 4
  • 16 bread slices


  • 1 cup Cheddar cheese


  • 1 cup shredded mozzarella cheese


  • 1-2 tbsp red chilli flakes


  • 1-2 tbsp dry paprika flakes


  • 2 cups Boneless chicken cubes


  • 1 cup capsicum cubes


  • 1 tbsp olive oil


  • 1 tbsp garlic mince


  • 1 tbsp chilli garlic sauce


  • 2 tbsp chopped coriander


  • 1 tsp salt


  • 1 tsp cumin powder


  • 1 egg beaten (for egg wash)

Directions

  • First of all, trim all the bread slices. Use them as bread crumbs later on or as croutons.
  • Roll all of them a bit to smoothen them out. Do not use stale bread for this. Keep them aside and go ahead with the chicken preparation. Preheat oven on 180°.
  • Heat oil in a pan and saute garlic mince first followed by onion slices until translucent. Add all the spices now followed by the chicken and capsicum cubes. Saute them on a medium high heat. Now lower the heat snd simmer for 15 minutes. Garnish with coriander and switch off the flame.
  • First of all dip all the bread slices in water just for a few seconds. Remove them as soon as possible and press between your palms to squeeze out any traces of water whatsoever remaining. Now start making rolls. Place 1 tablespoon of chicken filling on each and top with mozzarella and cheddar both as desired.
  • Bring all the sides of the bread to the centre and pinch it a bit to seal it well with the use of little water.
  • Arrange all of them on a parchment lined baking tray and bake for 22-25 minutes at first. Give these rolls an egg wash. After done, remove the tray and spread both the cheeses generously on top. Sprinkle red chilli flakes and dry parsley.
  • Now bake again for 8-10 minutes or until the cheese melts. Yummy bread dinner rolls are done in just a matter of few minutes. Best enjoyed on their own or can be served with any of your favourite soup.
