Ingredients
Serves 12
For Step 1, 3 egg yolks
35 gram canola oil
45 gram all purpose flour
1/2 tsp baking powder 1/4 tsp baking soda
1 pinch of salt
2 gram instant coffee powder
1 tsp warm water 30 gram milk
For Step 2, 3 egg whites
45 gram sugar
1/4 cup gems candy
1 tbsp powder sugar for sprinkling over it
Directions
Break the egg in mixing bowl and seprate the egg yolk from egg white and keep in other bowl
Dissolve the coffee powder with warm water nicely and keep aside
Heat the oil on low flame for 15 to 20 seconds
Add flour,baking powder, baking soda and salt in a bowl and sieve this
Now add flour mixture in warm oil and combine well
Add milk and egg yolk and combine all
Now add coffee mixture and mix
now take egg white and whisk till bubbly
Now add gradully sugar in egg white and continue whisk till peak form in the egg white
Now fold this egg white gentaly in 3 portion in egg yolk and milk mixute
Now transfer the mixture in cup cake mould gently and fill the mould half
Hide the gems candy in between in the cake mould mixture
Again pour some cake mixture over the gems candy and tap the mould to remove air bubbles
Bake this in preheated oven at 150* for 20 minutes
When done out from oven and keep on wire rack to let it cool
When cool sprinkle some powder sugar and place gems for garnish Can also garnish with caramel or with whipped cream
