Kesariya Zarda or Sweet saffron rice is a sweet dish made of rice boiled with orange zest, milk, sugar, saffron and dry nuts and fruits.

Ingredients

Serves : 2
  • 1/4 teaspoon saffron (kesar) strands


  • 1 cup basmati rice


  • 1 tablespoon ghee


  • 2 cardamoms powdered


  • 1 tablespoon milk


  • 1 cup powdered sugar


  • 2 pinches turmeric powder


  • 1/5th teaspoon Cinnamon powder


  • 1/4th cup chopped pistachios and cashews


  • 1 teaspoon chironji/chiroli


  • 1 tablespoon raisins /kismis

Directions

  • Dip the saffron strands in the warm milk and keep aside.
  • Clean, wash and soak the rice for 15 minutes, par boil the rice and strain.
  • Heat ghee in a big pan, and roast all dry fruits for a minute.
  • Add boiled rice, cinnamon powder, turmeric powder, all dry fruits, cardamom powder and mix well.
  • Add sugar and turn the rice upside down carefully so they don't break.
  • Add kesar milk and mix well
  • Garnish with dry fruits.
  • Serve hot
