Coconut milk - 2 cup Onion - 2 ( Finely sliced ) Green chilli - 1 ( diced ) Pudhina - 1 cup ( Finely chopped ) Coriander - 1 cup ( Finely chopped ) Rice - 1 cup Garam masala - 1/2 tsp Oil - 3 tbsp Salt to taste
Preparation for coconut milk : Ingredients : Coconut grated - 2 cup Water - 2 cup Boil water and pour into the grated coconut. Cover this and keep it aside . Once it is warm , transfer to a food processor and grind well. Now pour this through a fine sieve. Remove husk and extract milk. Keep the milk aside. Again add water and grind the husk. Now squeeze out milk again . See to that you finish with 2 cups of water. Don't add excess water. For if the milk is watery the rice won't taste good.
Preparation for Rice : Wash and strain rice ,keep it aside. Heat a pan . Add oil and once hot add onion and green chilli. Saute them well . Then add chopped coriander and pudhina. Now to the Rice add the coconut milk and bring in the sauted above mix. Add salt and check taste. To this add Garam masala . Mix it well and place the vessel in cooker. Now cover the cooker and put it on high flame, wait for 3 whistle. Then reduce Flame To low . Cook in low Flame for 10 minutes . Remove of Flame and wait for the cooker to cool down completly. Open and use a fork to loosen rice. Transfer to a serving bowl . Serve hot with Veg - kuruma. Note : Always prefer freshly grated coconut. Rice - Seeraga samba will taste much better to any other rice.
