Ingredients

Serves : 3
  • 1 cup basmati rice


  • 2 cups thick coconut milk or 1 cup thin and 1 cup thick coconut milk


  • 1/4 teaspoon garam masala optional


  • 1 teaspoon jeera


  • 3-4 green cardamom


  • 1 mace strand


  • 7-8 peppercorns


  • 4 cloves


  • 1 bay leaf


  • 1/2 onion thinly sliced


  • 2 teaspoon ghee


  • 1 teaspoon ginger garlic paste


  • 1/2 carrot chopped


  • 4-5 curry leaves chopped


  • 1 teaspoon salt or as per taste


  • 1 small cinnamon stick


  • 4-5 beans chopped


  • 1/4 cup peas or bell pepper chopped


  • 3 tbsp chopped coriander leaves

Directions

  • clean and soak rice for 30 minutes drain excess water and keep it aside
  • heat ghee in a vessel, ads bay leaf and whole spices roast until aromatic
  • add cashew nuts and fry until golden brown
  • add onions and stir fry until tender
  • add ginger garlic paste and saute until raw Aroma goes away
  • add chopped vegetables and curry leaves. saute for a minute
  • add coconut milk, coriander leaves and rice mix well
  • add salt and garam masala, mix and bring to boil
  • cover and cook on low heat for 15 minutes or until done
  • open lid fluff rice. serve with raita and curry
