Boil water. Add rice noodles. soak it for 15 minutes in hot water. Drain the water and immerse in cold water in order to arrest any further cooking. set aside.
Heat the oil in a wok over high heat. Add the onion, peas, carrots, cabbage, and capsicum. Adjust heat as needed and stir often until the veggies have softened but are not completely cooked yet.
Add the garlic, ginger & all spices and toss to combine and cook for about 1 – 2 minutes more.
Now add cooked rice & boiled rice noodles in veggies. Saute & cook for 1 minute.
Mix soya sauce, water & sugar in a mixing bowl. Pour it in noodles. Cook it for 1-2 minute.
