Ingredients

Serves : 4
  • 200 gm Rice noodles


  • 1/2 cup cooked Basmati rice


  • 1/2 cup thinly sliced cabbage


  • 1/2 cup thinly sliced carrots


  • 1/4 cup chopped capsicum


  • 1 /4 cup Green peas


  • 1/4 cup chopped spring onion


  • 1/2 tsp finely chopped garlic


  • 1/2 tsp finely chopped ginger


  • Spices: 1/4 tsp turmeric powder


  • 1/4 tsp black pepper powder


  • 1/4 tsp Coriander Powder


  • 1/8 tsp Cumin powder


  • 1/8 tsp yellow mustard powder


  • 1/8 tsp Saunf powder


  • 1/2 tsp curry powder


  • 1 tsp salt or as per your taste


  • For soya syrup : 2 tbsp soya sauce


  • 1 tsp sugar


  • 1/2 cup water


  • 2 tbsp Oil for shallow fry

Directions

  • Boil water. Add rice noodles. soak it for 15 minutes in hot water. Drain the water and immerse in cold water in order to arrest any further cooking. set aside.
  • Heat the oil in a wok over high heat. Add the onion, peas, carrots, cabbage, and capsicum. Adjust heat as needed and stir often until the veggies have softened but are not completely cooked yet.
  • Add the garlic, ginger & all spices and toss to combine and cook for about 1 – 2 minutes more.
  • Now add cooked rice & boiled rice noodles in veggies. Saute & cook for 1 minute.
  • Mix soya sauce, water & sugar in a mixing bowl. Pour it in noodles. Cook it for 1-2 minute.
  • Serve & enjoy Singapore Rice Noodles Veg pulav.
