Ingredients

  • 1 ½ teaspoons 2 tablespoonsVegetable Oil ( I Preferred Rice bran oil) 1 small Onion 2 medium carrots (Finley chopped) 2 cups additional veggies broccoli, cabbage, bell pepper, and/or fresh or frozen peas 1 tablespoon(1 inch) Minced Ginger 1 tablespoon (4-5 cloves) Minced Garlic 1 tbsp (to Taste) Salt 1 cups Boiled Rice 2 green onions Chopped 1 tablespoon Soy Sauce

    Cooking Directions Put a pan to heat on Medium flame and add 1 tablespoon of oil. Add the onion and carrots and cook, stirring often, until the onions are translucent and the carrots are tender, about 3 to 5 minutes. Add the remaining vegetable and salt. Continue stirring occasionally until the veggies are cooked through and turned golden, about 3 to 5 more minutes. Transfer this vegetable mixture to a bowl and Put the pan back on heat. Add 1 tablespoon oil to the pan and add the ginger, garlic, and cook until fragrant while stirring constantly. Now add the rice and mix it all together with ginger and garlic till rice turn golden. Add the green onions, and the cooked veggies along with Salt and Soy Sauce and stir well till all the ingredients are mixed for about 2-3 minutes. Serve hot.
