Soak brown rice for 1/2 an hour.
Heat oil in a pressure cooker. Add Tej Patta, cardamom, laung, saute for a while. Add sliced onions. Saute it. Add peas, carrots, cabbage & capsicum. Saute all for 1 minute.
Add soaked rice. Saute again. Add salt & 2 cup water. Stir it. Cover the lid.
Cook it over medium flame until 3 whistles. Switch off gas. Let it cool.
Transfer into serving dish. Garnish with shredded beetroot & coriander Leaves.
Serve hot with cucumber raita or plain curd.
