Ingredients

Serves : 4
  • 1/2 cup basmati rice or bomba rice


  • 1 Maggi seasoning cube


  • 2 cup water


  • 1 cup fresh orange juice


  • 1 large pinch saffron


  • 1/2 tsp orange zest


  • 6-7 orange segments


  • 1 tbsp olive oil


  • 1/4 cup finally chopped onions


  • 1/4 cup finally chopped celery


  • 1/4 boiled yellow corn kernels


  • 1/2 cup blanched broccoli florets


  • 1 tbsp boiled peas


  • 1/4 cup red bell pepper chopped


  • 1/4 cup capsicum chopped


  • 1 tsp chilli flakes

Directions

  • Wash and soak rice for 15 minutes., drain and keep aside
  • In a pan heat olive oil and sauté onions till pink.
  • Add bell pepper and celery and sauté for 2 minutes.
  • Add rice, water, Saffron, seasoning cube, chilli flakes and salt
  • Let it simmer on medium heat till the rice is half cooked.
  • Then add orange juice and orange zest
  • Cover the pan and cook for 5 minutes.
  • Add corn , peas and broccoli
  • Mix gently and evenly spread out veggies across the pan.Arrange the orange segments on the rice
  • Cover and cook on a gentle flame for 5 minutes until the rice is al dente
