Ingredients

Serves : 3
  • mutton 500 gram


  • 2 boiled eggs


  • 3 boiled potatoes


  • raw papaya paste 2 tbsp


  • for stock- oil 1/2 cup


  • hung curd 1 cup


  • fried onion 1 cup


  • ginger garlic paste 2 tablespoon


  • Whole black people 1 tablespoon


  • Clove 1 teaspoon


  • 10 Green cardamoms


  • black cardamom 2


  • Mace 4 blade


  • cinnamon stick 3 inch


  • caraway seed 1 tablespoon


  • salt 2 tablespoon


  • for gravy- stock 2 glasses


  • milk 1 cup


  • oil 3/4 cup


  • lemon juice 1 tbsp


  • 2 aloo Bukhara


  • biryani masala 2 tablespoon


  • to make biryani masala- black pepper 1tbsp


  • caraway seeds 1/2 tablespoon


  • cloves 1 teaspoon


  • 10 green cardamom


  • 3 black cardamom


  • 3 mace blades


  • cinnamon stick 2 inch


  • other ingredients- red chilli powder 1 tbsp


  • salt 1 tablespoon


  • rose water 1 tablespoon


  • Kewra water 1 tablespoon


  • Mitha atar 1 teaspoon


  • Saffron infused water 1 tablespoon


  • extra long Grain basmati rice 2 cups (soaked in water for 40mins)


  • to boil rice- cinnamon stick 2 inch


  • 5 green cardamoms


  • 5 cloves


  • 1 tbsp salt


  • Ghee 1/2 cup

Directions

  • dry roast and grind all whole spices(under biryani masala section) to make biryani masala.
  • Rub papaya paste on mutton pieces and marinate for at least 1 hour
  • Heat oil in Kadai and add whole spices.
  • Fry onion till brown.
  • add ginger garlic paste and cook well
  • now add mutton pieces and stir well.
  • add hung curd, salt and 1 tbsp biryani masala and cook well.
  • add water and close the lid.cook well 45minutes.
  • now separate gravy and mutton pieces
  • Take gravy in a pan and squeeze lime in Gravy and add aloo Bukhara.
  • pour some oil and 1tbsp chilli powder into it.
  • again add 1 tbsp biryani masala
  • when it comes to boil pour milk and stir well.
  • now add mutton pieces, kewra water ,rose water and Meetha atar.
  • also add the boiled potatoes.cook 5minutes.
  • in a Kadhai boil water with cardamom, cinnamon stick,salt and cloves.
  • Squeeze Lime into it.
  • pour water soaked rice and cook until 75% is done.
  • make layer of rice on mutton in a Hundi
  • pour some ghee and milk
  • add Saffron infused water and fried onion.
  • similarly make second layer of rice.put the boiled eggs on rice.
  • close the lid and put on gas to dum the biryani for 10 minutes in high flame and then 10 minutes in low flame.
  • open the lid and serve hot KOLKATA MUTTON BIRYANI with raita.
