dry roast and grind all whole spices(under biryani masala section) to make biryani masala.
Rub papaya paste on mutton pieces and marinate for at least 1 hour
Heat oil in Kadai and add whole spices.
Fry onion till brown.
add ginger garlic paste and cook well
now add mutton pieces and stir well.
add hung curd, salt and 1 tbsp biryani masala and cook well.
add water and close the lid.cook well 45minutes.
now separate gravy and mutton pieces
Take gravy in a pan and squeeze lime in Gravy and add aloo Bukhara.
pour some oil and 1tbsp chilli powder into it.
again add 1 tbsp biryani masala
when it comes to boil pour milk and stir well.
now add mutton pieces, kewra water ,rose water and Meetha atar.
also add the boiled potatoes.cook 5minutes.
in a Kadhai boil water with cardamom, cinnamon stick,salt and cloves.
Squeeze Lime into it.
pour water soaked rice and cook until 75% is done.
make layer of rice on mutton in a Hundi
pour some ghee and milk
add Saffron infused water and fried onion.
similarly make second layer of rice.put the boiled eggs on rice.
close the lid and put on gas to dum the biryani for 10 minutes in high flame and then 10 minutes in low flame.
open the lid and serve hot KOLKATA MUTTON BIRYANI with raita.
