Ingredients

Serves : 4
  • Mutton with bones 500 gms


  • Curd 1 cup


  • Ginger garlic paste 2 tablespoons


  • Red Chilli powder 1 teaspoon


  • Turmeric powder 1 teaspoon


  • Garam masala powder 1 teaspoon


  • Salt 1 teaspoon


  • Cashew paste 1 tablespoon


  • Mint leaves 1 fistful- All the above ingredients are for marinating


  • For Biryani- long grained Basmati rice 2 cups


  • Milk 1 cup


  • Saffron 10-15 strands


  • Ghee 100 ml


  • Cloves 5


  • Green cardamom 5


  • Cinnamon 2 inch


  • Star anise 4


  • Salt 2 teaspoons


  • Fried onions 1/2 cup


  • Kneaded atta 1 lemon sized

Directions

  • Marinate the mutton with all the ingredients for marination for 6 to 8 hours or overnight in a refrigerator.
  • Half cook the basmati rice with whole spices and salt
  • Ina heavy bottomed pan add ghee and add the marinated mutton and cook covered in a lower flame for half an hour or till mutton is cooked soft.
  • In a heavy bottomed pot or handi add a layer of cooked mutton
  • Then add a layer of rice
  • Sprinkle some milk infused with saffron and also sprinkle fried onions .
  • Repeat the layers
  • Finally close the Handi with a lid and place a heavy object over the lid or close the gap between vessel and lid with chappathi dough.
  • Let it cook in lower flame for 15 to 20 minutes now the rice and mutton would have been infused with the flavours.
  • Serve hot with onion raitha and salads
