Ingredients

Serves : 4
  • 1 cup rice long grain basmati


  • 1 cup Cauliflower (florets)


  • 1/2 cup chopped carrot


  • 1 cup green peas boiled


  • 1 onion cut into thin slices


  • 1/2 teaspoon Cumin seeds


  • 1/4 teaspoon Mustard seeds


  • 1 inch Dalchini stick


  • 1/2 teaspoon garam masala


  • 1 pinch Asafoetida /hing


  • 1/2 teaspoon Turmeric powder


  • 1 tablespoon Tamarind pulp


  • 1 tablespoon Ghee


  • 2 tej patta/bay leaves


  • 2 badi elaichi/big cardamoms


  • 4 kali mirch /pepper corns


  • 2 laung/cloves


  • 2 whole red chillies


  • 1 teaspoon salt or to taste


  • 1 tablespoon Coriander leaves chopped for garnish.

Directions

  • Wash rice and drain the water and keep aside.
  • Heat ghee in pressure cooker add mustard seeds , cumin seeds ,hing, tejpatta, badi elaichi, kalimirch, dalchini stick and sauté for a few seconds.
  • Add onions and cook till they turn little golden brown.
  • Add cauliflower, carrot and turmeric powder, salt and mix it well.
  • Now add washed rice and cook for 1-2 minutes.
  • Add 2 cups of water and tamarind pulp. Once its start boiling give a nice stir otherwise vegetables and rice will get stuck at the bottom.
  • Close the lid of the pressure cooker and cook up to one whistle.
  • Turn off the heat.
  • Let the pressure release by itself.
  • Open the lid and add boiled peas and simmer for 1 -2 minutes.
  • Mix well gently so that the rice strands do not break
  • Drizzle ghee and garnish with coriander leaves. Serve hot with any raita.
  • Tip- can add 2 pinches sugar while boiling , it helps in retaining green colour of peas
