Preheat oven to 180 and line muffin tin
Sieve all dry ingredients and keep it aside
In a bowl whisk egg oil, jaggery and yoghurt well. jaggery brings in different flavour to muffin so you can use powdered sugar as substitute in case you dislike the flavour that jaggery brings in
Add vanilla extract and cardamom. Mix well
Add dry ingredients and whisk until well combined
Pour the batter into prepared muffin tin upto 2/3 level
Bake for 14-18 minutes until done. Toothpick inserted into centre should be clean
Allow to cool for 30 minutes. Demould
Dust with icing sugar and serve warm or top with whipping cream and serve cold
