Ingredients

  • Long grain rice (basmati rice)-1cup


  • Cloves-4nos


  • Peppercorns-4nos


  • Cinnamon stick- 1/2inch


  • Bay leaves -2nos


  • Red onions-2nos


  • French Beans -25gms


  • Carrots-25gms


  • Capsicum-1no


  • Potato-1no


  • Cauliflower-25gms


  • Green peas -25gms


  • Ghee-3tbsp


  • Turmeric -1tsp


  • Red chilli powder -2tsp


  • Garam-masala- 2tsp


  • Ginger-Garlic paste-1tsp


  • Green chilli paste-1/2tsp


  • Saffron -2-3 strans


  • Milk-2tbsp


  • Salt -1tbsp


  • Corriander - 2tbsp finely chopped


  • Curd-1cup

Directions

  • Wash and Soak rice for 1hr.
  • Take heavy bottom pot,add water in it and place it on stove to boil water
  • When water starts boiling ,add cloves, cinnamon stick , peppercorn, Bay leave and salt .Then add rice to it
  • Cover and cook untill the rice is 3/4 percent done
  • Then strain the rice in a strainer
  • Keep it aside
  • Now take a heavy bottom biryani pot, Add ghee to it.
  • Add chopped onion to it. Saute it for a minute. Now add finely chopped beans,carrots, potatoes, cauliflower,peas in pot
  • Cover and cook for 1min , Now add turmeric, red chilli powder, ginger-garlic paste, green chilli paste ,garam- masala ,and saute for 1 sec
  • Then open and add rice to it .Layer rice on veggies
  • Add saffron to luck warm milk,stir it so saffron dissolved and leave it's fragrance
  • Pour saffron mixture on rice
  • Adjust seasoning by adding salt
  • Cover and cook untill rice is perfectly cooked
  • Garnish with corriander leaves and serve hot with curd
