Ingredients
Serves 3
Rice (India gate tukda basmati)200 grams
Onion 1 finely chopped
Oil 2 tbsp
Bay leaf 1
Paneer cubes of 200 grams paneer
Tomato puree of 1 tomato
Salt 1 tsp or as per taste
Turmeric powder 1/2 tsp
Ghee 1 tbsp
Red chilli powder as preffered or 1 tsp
Hing 1 pinch
Water 1/2 litre
Chopped coriander leaves 1 sprig
Directions
Wash and soak the rice for 10 minutes
Drain water and keep aside
In a pan heat oil
Fry the paneer cubes till golden in colour and keep aside
Add hing bay leaf and saute a bit
Add chopped onions and fry till they are golden
Add the tomato puree
Add turmeric powder and salt
Add Red chilli powder too
Add the rice
Add paneer
Mix well so that each grain gets coated with oil
Add water (double the amount of rice)
Transfer to a cooker and cook for two whistles. Add chopped coriander
When the cooker cools down add ghee over the rice
Serve with raita
