Soak rice in enough water for almost 20 minutes. Cook al dente adding half of salt.
In a pan, heat ghee and add dry red chillies along with mustard and cumin seeds. Let them crackle a bit before adding garlic mince, curry leaves, bay leaves and cinnamon stick.
Saute sliced onions now with ginger garlic mince until translucent. The raw smell of the onions should fade away before adding red chilli flakes and slit green chillies. You can add spices according to your choice.
Finally add the sprouts and stir gently to mix all. Cover and cook just for about 7-8 minutes. Do not cook more than that. The crunch should be retained. And sprouts need not be cooked for a long time. A simple stir fry is more than enough.
