Ingredients

  • spices for yakhni- onion whole peeled 2 medium size


  • garlic non peeled 1 big size


  • coriander seeds 3 tablespoon


  • fennel seeds 4 tablespoon


  • cinnamon stick 6 inch size


  • cumin seeds 1 tbsp


  • black cardamom 10


  • green cardamom 25


  • Black pepper 1 tablespoon


  • cloves 1/2 tablespoon


  • Ginger whole peeled 2 inch


  • bay leaves 4


  • salt 2 tablespoon


  • mutton 1kg


  • Pulao masala ingredients- ghee 1 cup


  • yogurt 300 gram


  • onion sliced 300 gram


  • ginger garlic paste 2 tablespoon


  • caraway seed 1 tablespoon


  • green cardamom 10


  • black cardamom 4


  • cloves 15


  • black pepper whole 1/2 tablespoon


  • cinnamon stick 3 inch


  • bayleaves 3


  • basic garam masala powder 2 tbsp


  • fennel powder 1 tbsp


  • Mace powder 1/4 tablespoon


  • Nutmeg powder 1/4 tablespoon


  • kewra water 6 tbsp


  • extra long basmati rice 1kg


  • Saffron infused Water 2 tbsp

Directions

  • take all ingredients for yakhni in cooking bowl.
  • mix 3 glass water and boil in high flame.
  • now give two tablespoons salt and close the lid and boil for at least 50 minutes in low flame.
  • Cook the meet up to 90%.
  • now separate mutton from yakhni and strain all the spices from yakhni.
  • take oil in Cooking Pan and fry the sliced onions until brown coloured.
  • now mix yoghurt and ginger garlic paste into this and saute.
  • no mix all spices for pulao into this and cook in medium flame.
  • after a while mix the separated yakhni and boil for a minute.
  • now give the mutton into this mixture and cook for 15 minutes in low flame.
  • Now mix previously soaked rice (for 45 minutes).
  • taste for Salt now and add water if needed.
  • boil at High flame until rice is boiled and check carefully for rice and always stir it.
  • after soaking of water add fried onion ghee, Kewra water,saffron infused water.
  • serve hot yakhni pulao with raita aur Kabab.
