Ingredients

Serves 3

  • 1 cup rice

  • 1 bay leaf

  • 1/2 tsp shahi jeera

  • 2 green cardamoms

  • 2 cloves

  • 1 small cinnamon stick

  • 1 onion

  • 1 tsp ginger garlic paste or grated ginger

  • 2 carrots grated or 1 cup chopped finely

  • 3/4 tsp garam masala (adjust

  • 1/2 tsp red chili

  • 1 Tbs salt as needed

  • 1 Tbs curry leaves

Directions

    Wash and soak rice for about 20 minutes. Cook it grainy and set aside

  • 02

    Heat and pan with oil and fry all the dry spices until they crackle. add curry leaves.

    Add onions and saute until transparent or golden.

  • 04

    Saute ginger garlic paste till the raw smell vanishes.

    Add carrots and saute for one to two minutes.

  • 06

    Sprinkle salt and mix. Cook till the veggies are cooked.

    Add spice powders- chili powder, masala powder coriander leaves.

  • 08

    Stir and saute for a minute for the raw smell of chili powder to go off.

  • 09

    Cover and cook on a low heat if using chopped carrots and not grated.

  • 10

    Mix everything well and serve carrot rice with a raita.
