  • 2.5 cups flour

  • 220g unsalted cold butter cubed

  • 3 tbsp cold water

  • 1 egg beaten

  • 1 teaspoon salt

  • 4 medium ripe mangoes chopped as chunks

  • 1/4 cup corn flour

  • 1/2 cup sugar

  • 2 tbsp orange juice

  • Zest of 1/2 orange optional

  • 1 eggs beaten

  • 1 teaspoon sugar


  • In a bowl mix flour, sugar and salt. Add butter. Using fork mix until crumbs are formed
  • Add 1 egg and water sir until well combined divide the dough into 2 equal parts cover each portion with cling wrap
  • Refrigerate for 1 hour
  • Dust surface with flour, take one portion and roll it slightly bigger than pie dish. Grease pie dish. Place rolled dough in it. Trim edges
  • Chill crust for 30 minutes
  • Preheat oven to 180. Add foil on top of crust. Add rice this will prevent dough from rising
  • Bake for 10 minutes. Allow crust to cool completely
  • In a bowl mix sugar and cornstarch. Add orange juice, zest and chopped mangoes. Toss well. Add to crust. Chill for 20 minutes
  • Meanwhile take other portion of dough and roll into circle. Place over the crust and trim edges. give egg wash to the top layer
  • Optionally to prevent dough wastage I made leaves and flowers from left over dough. place them on top crust and give egg wash again
  • Make few slits to top layer. This will allow steam to pass and pie will get properly cooked
  • Sprinkle 1 teaspoon sugar on top of pie
  • Bake for 15 minutes in preheated oven at 190
  • Cover sides with foil and bake for 15 minutes in preheated oven at 180
  • Allow pie to cool completely
  • Detach bottom of pie dish. Transfer to serving plate
  • Pie should be cooled atleast for 3-4 hours
  • Cut and serve
