Ingredients

Serves : 4
  • 1 cup basmati rice


  • 4 cups water


  • 1/2 teaspoon turmeric


  • 1 teaspoon salt or as per taste


  • 1/2 teaspoon oil


  • 1 tbsp butter


  • 1/2 onion finely chopped


  • 1/4 cup peas


  • 1 potato boiled and cubed


  • 1/2 capsicum finely chopped


  • 1 tomato chopped


  • 1 teaspoon ginger garlic paste


  • 2 teaspoon red chilli paste


  • 2 teaspoon pav bhaji masala


  • 3 tbsp water


  • 1 tbsp lemon juice


  • 3 tbsp chopped coriander leaves

Directions

  • wash and cook the rice over medium heat without lid, add oil salt and turmeric powder
  • Cook until almost done. Drain excess water. Allow to cool
  • in a large Pan melt butter add onions and saute until translucent
  • add ginger garlic paste and stir fry until raw Aroma goes away
  • Add tomatoes and cook until they are soft
  • Mash all the veggies well using potato masher
  • Lightly mash potatoes and add to pan. Mix well
  • Add capsicum and stir fry for 2 minutes. Capsicum should retain the crunchy taste
  • Add red chilli paste, pav bhaji masala, salt and water. Mix well
  • Cook for 4-5 minutes
  • Add lemon and mix
  • Add rice and gently mix without breaking grains
  • Garnish with coriander leaves and serve hot with raita
