Ingredients

Serves : 4
  • 1/2 kg carrots


  • 1/2 liter 1 cup milk


  • 2 cups quick cooking oats


  • 1/4 cup rava


  • 1/4 tsp salt


  • 3 tbsp maple syrup


  • 1/2 tsp cardamom powder


  • 1/2 cup sugar or as per taste


  • 1 tbs pistachios to garnish


  • 1 twig edible leaves to decorate, i have used dill


  • 1 tbsp clarified butter


  • 1 Pinch of baking soda


  • 1 tbsp healthy oil to make pancakes

Directions

  • Grate carrots
  • Powder oats and soak it in a cup of milk along with rava for 15 minutes
  • Heat up clarified butter and fry carrots on high flame for 5 minutes
  • Add sugar and cardamom powder
  • Add milk and let it simmer until thick
  • Give a churn to oats semolina mix in a mixure, add salt and baking soda, adjust the thickness by adding more milk, it should not be too runny
  • Grease a pan and make pancakes with oats batter by flipping on both the sides
  • Keep them warm
  • Spread a pancake, keep some carrot halwa in the center and roll it
  • Cut into too, drizzle some maple syrup
  • Take remaining halwa and shape them like carrots, tuck some edible leaves to give it a look of a fresh carrot, if you can get carrot leaves itself, it will be great
  • Garnish it with pistachios and Serve it along with pancake rolls.
  • Kids will love it, they will learn a few things in a fun way while eating it.
  • You can also serve these healthy pancakes just with a drizzle of maple syrup along with some fruits that they love
