Ingredients

Serves 2

  • 1. Microwave carrot halwa:

  • 5 tbsp ghee

  • 2 tbsp cashews

  • 1 tbsp raisins

  • 2 cups finely grated carrot

  • 1 cup warm milk

  • 2 tbsp grated unsweetened khoa or mawa(optional)

  • 1/2 - 3/4 cup sugar

  • 1/2 tsp cardamom powder

  • 2. Cream cheese frosting:

  • 1/2 cup heavy whipping cream

  • 1/2 cup cream cheese

  • 3 tbsp sugar

  • 1/4 tsp vanilla essence

    Carrot Halwa:

    In a microwave safe bowl,add ghee (a tbsp),nuts and raisins.Micowave on high for 1 min.

    Remove roasted raisins and nut from the bowl.In the same bowl,add Finley grated carrots.Mix well and microwave on high for 3 mins.Take out from the oven,stir well and again microwave on high for another 3 mins.

    Take out from the oven,add khoa(mawa),sugar,cardamom powder and ghee(a tbsp).Mix well and microwave on high for 3 mins.Then add ghee(a tbsp),Stir well and microwave on high for another 3 mins.

    Finally add remaining ghee and garnish with roasted nuts and raisins.

    Cream cheese frosting: 1.In a bowl,add whipped cream and beat well.Then add cream cheese,sugar,vanilla essence and beat until it becomes thick consistency(shown in the video).

    Layer glass bowl with carrot halwa and cream cheese frosting in a alternative manner.Garnish with chopped nuts and serve.

    Note: Added khoa or mawa for extra richness.
