Ingredients

  • Black cardamom 4


  • Green cardamom 2


  • Cloves 4


  • Whole black pepper 8-10


  • Cinnamon stick 1/2"


  • Bay leaves 4


  • Whole coriander 1/2 teaspoon


  • Cumin seeds 1 teaspoon


  • Turmeric powder 1/2 teaspoon


  • Coriander powder 2 teaspoons


  • Biryani masala 2 teaspoons


  • Red chilli powder 1/2 teaspoon


  • Cashwes 2 tablespoons


  • Raisins 2 tablespoons


  • Fine chopped onion 1


  • Fine chopped tomatoes 2


  • Chopped cauliflower 1/2


  • Sliced carrot 1


  • Fine chopped green capsicum 1/2


  • Fine chopped red capsicum 1/2


  • Green peas 1 cup


  • Boiled soya chunks 1/2 cup


  • Fine chopped beans 1/4 cup


  • Choppes coriander leaves 1/2 cup


  • Chopped mint leaves 1/2 cup


  • Chopped green chillies 2


  • Ginger garlic paste 2 tablespoons


  • Curd 2 tablespoons


  • Refined oil 2 cups


  • Pure Ghee 4 tablespoons


  • Long grain rice 2 cups


  • Rose water 1 teaspoon


  • Saffron food color 1 pinch


  • Salt to taste 1 teaspoon

Directions

  • Take a wok and heat oil add cashwes and fry it well, then add sliced onions and fry them well until brown in colour, then fry potatoes, then fry cauliflower and carrots.
  • Lessen some oil, then fry bay leaves, black pepper, black cardamom, cloves, cumin seeds, chopped onions, ginger garlic paste and roast it all well.
  • Then add tomatoes and fry until soft, add turmeric powder, red chilli powder, biryani masala, ½ glass water and cover and cook.
  • Now take a big vessel and add water, black cardamom, green cardamom, cloves,bay leaves and boil it all nicely.
  • When totally boiled add soaked rice and cook until 70% then drain water.
  • Take a heavy bottom wok, heat pure ghee and add cumin seeds, add rice then layer it with gravy then add mint leaves, coriander leaves, cashwes, raisins,fried sliced onions, pure ghee and again layer it with rice, cashwes, raisins, pure ghee, saffron which was soaked in rose water and then cover it with a plate and seal all over the plate with a dough and cook for 10 minutes on a low flame.
  • Your LUCKNOWA DUM BIRYAANI is ready serve it with your favorite chutney or raita.
