Ingredients

Serves : 2
  • Long grain basmati rice half cooked 4 cups


  • Onion finely chopped 1


  • Tomato finely chopped 2


  • Capsicum finely chopped 2


  • Cauliflower chopped 1 cup


  • Carrot finely chopped 1


  • Sweet corn 1 cup


  • Ginger garlic paste 2 teaspoons


  • Turmeric powder 1/2 teaspoon


  • Red chilli powder 1/2 teaspoon


  • Coriander powder 1/2 teaspoon


  • Biryani masala 2 teaspoons


  • Cloves 8-10


  • Green cardamom 5-8


  • Black pepper corns 8-10


  • Salt according to the approximately 1 teaspoon


  • Hung curd 1 cup


  • Vertically chopped and deep fried onion 1 cup


  • Fried cashew nuts 1 cup


  • Saffron 1 teaspoon soaked in 1/2 cup of water


  • Mint leaves 1 tablespoon


  • Ghee 2 tablespoons

Directions

  • Heat ghee in a pan and add ginger garlic paste and finely chopped onions
  • Saute' till transparent and now add , all the spices mentioned in the ingredients
  • Add all the finely chopped vegetables, mix well and adjust salt according to taste and cook cover for next 5 minutes on low heat
  • Add hung curd to the cooking veggies mix well , cook till oil separates and switch off the heat
  • Now take a microwave safe dish and grease it with some butter. Layer it with half done rice in the bottom
  • Now give the layer of cooked veggies and then again cover it with the layer of rice
  • Repeat the process 3 to 4 times and lastly cover it with the layer of rice
  • On top Sprinkle the saffron soaked in milk on top layer and cover it with fried onion and white cashew nuts
  • Cover the dish and microwave it for 10 minutes on lowest temperature
  • flavourful veg dum biryani is ready to relish. Enjoy endlessly with your friends and family
  • Serve hot immediately with curd or raita
