Ingredients
Serves 8
Chicken breast cubes 500 gm
Ginger Garlic paste 2 tbsp
Salt 2 tbsp
Red chilli flakes 2 tbsp
Kasoori methi 3 tbsp
Cumin powder 1 tbsp
Garam masala 1 tsp
Pav bhaji masala 2-3 tbsp
Black pepper powder 1 tbsp
Coriander leaves chopped 1/4 cup
Capsicum finely chopped 2 cups
Carrots finely chopped 1 cup
Green Peas 1 cup
Onions chopped 2
Oil 5-6 tbsp
Maggi seasoning cubes 2 (optional)
Caraway seeds (Shah jeera) 1 tsp
Rice 3/4 kg
Directions
Soak rice in enough water for 20 minutes. Cook al dente with caraway seeds and maggi seasoning cubes.
Also add salt as per taste and a tablespoon of lemon juice for a fluffier rice.
In a cooking pot, heat oil and saute onions with ginger garlic paste until light pinkish in colour.
Add chicken cubes to the pot along with the other spices one by one. Also add kasoori methi to it.
Mix well and saute until the chicken is done. Also add the veggies of your choice now.
Do not cook them much as they should retain the crunch. Adjust spices according to taste.
Cover and simmer for 15-18 minutes on a medium high heat. Add in cooked rice and mix well taking care not to break the grains.
Garnish with chopped coriander leaves and serve hot with mint raita as i did to your family and guests
An amazingly delish idea by me this festive season for you all. The aromatic rice speaks for itself when it is served to your guests. Made totally my way using spices from my pantry of my choice and liking. Use any number of veggies you wish for this. A complete one pot meal that can be relished on it's own or with a simple mint raita as i did. Stunningly beautiful and aromatic due to the spices used that adorns your dining table with it's neat presentation and looks. Happy Cooking!
