Ingredients

Serves : 3
  • Tomato chutney (leftover from the previous day) 3/4 cup


  • Curry leaves 7-8


  • Asafoetida 1/8 tsp


  • Black mustard seeds 1 tsp


  • Garam masala 1/2 tsp


  • Cooked rice 3 cups


  • Salt 1 tsp


  • Ghee 2 tbsp


  • Cashewnuts fried 1/4 cup

Directions

  • Cook rice as always and set aside.
  • To a pan, add curry leaves, asafoetida and mustard seeds. After they crackle, add the leftover tomato chutney. Mix well and stir in the cooked rice. Cover and let it heat for a few minutes.
  • Sprinkle garam masala and garnish with fried cashews for a delicious meal.
  • Even leftover rice can be put to use in this recipe just as the chutney. And there is no wastage of food either. Treat your family to this beautiful looking rice at lunch or dinner as per their preference.
