Ingredients

Serves : 4
  • 1 large bringal cut into cubes


  • 1 tablespoon oil


  • 1/2 teaspoon mustard seeds


  • 5 curry leaves


  • 2 green chillies


  • 4 smashed garlic pods


  • 1 teaspoon urad dal


  • 2 sliced onions


  • 1/4 teaspoon turmeric powder


  • 1/2 teaspoon chilly powder


  • 3/4 tablespoon cumin powder


  • 100 ml butter milk


  • 2 tablespoon grated coconut


  • Salt 2 taste

Directions

  • Heat oil in a kadai, to it add the mustard seeds and curry leaves. Add the urad dal, garlic and green chillies. Saute till the dal turns light brown
  • Add the onions and fry for a minute.
  • Add the brinjal and fry for 3 minutes
  • Add the powdered spices and fry for 2 minutes. Add salt and butter milk and cook on low flame for 5-8 minutes.
  • Garnish with coriander leaves and serve hot.
