Ingredients

Serves : 4
  • 350g Atta


  • 150 ml oil


  • 1& 1/2 tsp salt


  • 1 tsp Turmeric powder


  • 1 tbsp Cumin-ginger paste


  • 1 tsp Green Chili paste


  • 1/2 tsp Cumin seeds


  • 2 tbsp soaked brown chickpeas


  • 150g ripe pumpkin


  • 50g Green beans


  • 1 medium sized potato


  • 1 tsp garlic paste


  • 1 medium-sized bowl raita


  • 1 tomato

Directions

  • Pour atta, 1/2 tsp salt and 2 tbsp oil in a medium sized bowl. Mix them well, then add little water at a time and knead into a slightly tight and smooth dough. Cover the dough for 15 min.
  • Heat the kadhai in medium flame then pour oil and after 1 min add cumin seeds, let them splutter. After that add garlic paste, chopped pumpkin & potato and sliced green beans, cook them for 2 min.
  • Now add turmeric powder an salt. Mix them properly for 5 min. After that add cumin-ginger paste, brown chickpeas and green chili paste. Cover it for 3-4 minutes and turned into low flame.
  • When all the veggies became soft, mash them properly and evaporate excess water. Switch off the flame.
  • Side by make 16 balls out of the dough. Flatten them into a circle of 3 inch diameter using chakla and rolling pin. Make 16 circles.
  • Take one circle and spread 1 tbsp sabzi and cover it with another circle then press the sides in such a way so that it looks like STAR shaped.
  • Heat the oil in a kadhai in medium flame. After a minute lower the stuffed puri and cook it in high flame till it becomes golden brown from both sides.
  • Transfer it in a plate. Same way make the rest puries.
  • Garnish them with sliced tomato and black pepper.
  • Enjoy delicious Star Puries with Raita.
