Ingredients

Serves : 4
  • Chicken curry: Chicken - 500 gm


  • Yoghurt - 4 tbsp


  • Onion paste - 1/2 cup


  • Almond paste - 2 tbsp


  • Peppercorns - 12


  • Cloves - 6


  • Cinnamon - 1


  • Bay leaf - 1


  • Cardamom - 4


  • Cumin seeds - 1 tsp


  • Roasted poppy seeds paste - 2 tsp


  • Red chilly powder - 2 tsp


  • Ginger garlic paste - 2 tbsp


  • Salt - 1 tsp


  • Ghee/refined oil - 1 tbsp


  • For the rice : Basmati rice - 1 cup


  • Salt - 1/2 tsp


  • Bay leaf - 2


  • Star annise - 1


  • Cardamom - 2


  • Cloves - 4


  • Oil - 1 tsp


  • For garnishing : Fried sliced onions - 1


  • Fried cashew nuts - 10


  • Fried raisins - 10


  • Saffron in milk - 2 tbsp


  • Corriander leaves - 1 tbsp


  • Kewra water (optional) - 1 tsp

Directions

  • To make the chicken curry , grind all the spices mentioned and mix the chicken with that, youghurt, ginger garlic paste , salt.
  • Now heat a pan, put some ghee/oil, fry the onion paste till it is Brown and add the marinated chicken.
  • Cook till almost done and then add the almond paste and poppy seed paste. add little water to make a gravy. Keep aside.
  • Now boil water and add the spices mentioned under the "rice" ingredients. Add a little oil as well. Put the washed basmati rice and cook till almost done. strain the rice. don't throw way the water. Saffron can be mixed in this water.
  • Now grease the biryani pot and layer it with the rice. then add the chicken curry and cover with rest of the rice. Pour the saffron in water and some ghee on top.
  • Cover it and seal with dough. Cook for 35-40 minutes on a low flame. Open and garnish with the onions, and nuts and serve.
