For the wet ingredients :- jaggery 1 cup
Curd 1/2 cup
Ghee 3/4 cup
For the dry ingredients :- wheat flour 2 cups
Baking powder 1 tsp
Baking soda 1/4 tsp
Cinnamon powder 1/4 tsp
Salt 1/4 tsp
1/2 cup to 1 cup water
Dry fruits and tuti fruity of your choice 3/4 cup
First mix all the wet ingredients together and keep aside.
Now cut the dry fruits of your choice. Here I have taken cashew n almonds only but u can take walnut dates etc. and tuti fruity of any color.
In the mean while preheat your pressure cooker and grease the aluminium tin with ghee n wheat flour.
Now sieve all the dry ingredients together.
Give a good mix to the wet ingredients so that all the jaggery dissolves well n become smooth n creamy.
Now mix the dry ingredients batch by batch with the wet ingredients in cut and fold manner. Add water as required. Do not overmix.
Coat the dry fruits with wheat flour and add to the mixture. Give a stir. And your cake batter is ready.
Now put all the batter in the tin and tap twice. Place the tin inside the pressure cooker above a wired rack. Remove the whistle and bake for 45 minutes in medium low heat.
After 40 min check the cake by inserting a tooth pick. If it comes out clean your cake is ready and if not then cook for some more minutes in medium low heat.
When cool down cut and serve.
